This is a great little book for anyone interested in setting up or buying a restaurant. It covers all the basics although I feel it could have gone into a bit more detail on certain key subject like how to calculate cover figures and licensing, but as i said, covers all the basics. The fact that the book has been written with the UK market in mind is like breath of fresh as most other books are for US market.

This book is essential reading if you plan on opening a restaurant in the UK. There are a lot of books about, mostly from an American perspective, but this is from someone who has been in the trade and knows what to expect. I wish that this this book had been out when I opened my first restaurant four years ago. Reading this book, makes me realise that the things that you go through are a common experience. This is written from a sensible human perspective.If you read this book and THEN open a restaurant it will pay for itself many times over.

I found this book one of the most useful that i have purchased regarding the catering industry.It is an industry that i have just started working in and the in depth information has been invaluable to me. Everything is clearly set out in the book,easy to find exactly what you want to know and easy to read and take in. The book doesnt make everything seem rose tinted,you get the facts,running such a business is hard work and this book makes that very clear,all the pitfalls are pointed out,but it is also encouraging in starting up such a business as long as you plan and are prepared. Recommended.

She takes you by the hand and walks you through the whole business, providing a wealth of practical examples and hints along the way. If you only buy one book on the subject, get this one.
