Don't Be Fooled - This Book Is Not Healthy!

Healthy gluten free eating? This book never strays beyond rice, tapioca and maize flour - all known to cause blood sugar spikes that can lead to diabetes and weight gain.
There are some interesting recipes in this book, but stay far away from the breads, tarts and desserts - they are unimaginative, heavy and have the sandy dry texture of old style gluten free cooking, from the days when we thought rice flour was all there was.
Ballymaloe is renowned for it's food and creativity - pity they couldn't extend that to their gluten free offering.

Disappointing Gluten Free Cooking

cooking free from gluten can be quite the challenge. finding ways to hold bread, cakes, pastry and cookies together without the presence of gluey wheat can unfortunately result in sand like textures. this books recipes do not rise to the gluten free challenge. its flapjacks crumble and yorkshire puds remain flat as pancakes. it unfortunately results in disappointing time and money spent in the kitchen. making an already difficult task even more so.
